Texas Barbecue--Delish!!

Yesterday was an epic day at our place...after living in Texas for almost 7 years, my Best Beloved has learned the secrets to great Texas barbecue, and now we can cook it at home! Woohoo!




Texas barbecue is in a category all by itself--it is like nothing we had ever tasted before on the East Coast. One either loves it or hates it--there doesn't seem to be an in-between. We happen to love it. We were smitten the first time we tried it almost 7 years ago when we came to San Antonio for our house hunting trip, and our real estate agent took us to Rudy's for lunch. Oh. my. word. We were hooked from the first bite.

We've enjoyed plenty of Texas barbecue since then, but, alas, we had no idea how to cook it. Yesterday, a friend and native Texan shared his secrets with Best Beloved. He brought everything needed to our place so Best Beloved could grill this beautiful brisket on our very own grill. Epic.

Next up is finding out our friend's secret "ketchup" recipe. That's what he calls his barbecue sauce, but we call it the best BBQ sauce we've ever had. In the meantime, I've set out on a quest to find an acceptable, tasty barbecue sauce that I can make at home. 

Since Rudy's was our first taste of Texas barbecue, it seemed fitting for me to try a clone of their sauce, and I found it at Beth's Favorite Recipes. Success! Best Beloved loved the taste, and it'll hold us until he develops his own special 'ketchup' or his friend shares his recipe--whichever comes first.
