Healthier Cookies

Since going through the 17 Day Diet with my Best Beloved, we're making better eating choices, which is a very good and lasting thing :)

For me, one of the lasting things from my time using the 17 Day Diet is that I cannot tolerate sugar anymore. That's a HUGE thing for me--I had such a sweet tooth! Recently I've discovered that if I eat something made with regular sugar but no protein, I get a headache--yuck! I'd prefer to skip the headache, thank you very much. Sugary sweets are out for me. 

To replace sugary sweets, I've been trying other alternatives. One is sugar-free pudding made with fat-free milk. Best Beloved and I both like that treat. I make sugar-free chocolate and sugar-free vanilla, measure about 4 ounces into containers (layering @ 2 ounces vanilla and 2 ounces chocolate), and we have quick treats available during the day. Something sweet with less guilt :)

I'm also playing around with whole wheat flour and agave nectar...trying different recipes for homemade rolls, homemade tortillas, and homemade cookies. And let me tell ya, this much homemade is definitely something new for me--most especially coming up with my own recipes...

Today's batch of Healthier Cookies turned out the best so far:
1 stick butter
1/2 cup Agave nectar
2 cups whole wheat flour
1 1/2 tsp baking powder
1/3 tsp salt 
1 egg
1 cup Old-fashioned oatmeal
1/2 cup chocolate chips

Preheat oven to 375. In a mixing bowl, cream butter. Add agave nectar and cream together. In a separate bowl, mix whole wheat flour, baking powder, and salt. Slowly add flour mixture to butter mixture.  Add egg and mix well. Then stir in oatmeal and chocolate chips.

Shape dough into rounded balls and place on ungreased cookie sheet. Bake for 8 mins or until done. Makes about 12-14 cookies.
